No-Knead Bread



Ingredients:

3 c flour (I use: 1 1/2 wheat, 1 1/2 bread flour, both organic)
1/4 teaspoon yeast (I use regular yeast, no preservatives, stored in the cooler section of the grocery store.)
1 1/4 teaspoons salt
Pot with lid that is suitable for the oven. (Cast iron, enamel, stoneware)

Directions:

In a mixing bowl combine all ingredients.  Add 1 5/8 cups of water and stir until blended.  The dough will be sticky and gooey.  Cover the bowl with plastic and leave on the counter over night.

When you return from work the next day or 12 - 18 hours later, your dough should be much larger and will be dotted with bubbles.

Preheat your oven to 450 degrees and place your pot in the oven while it is preheating, this is very important, otherwise, if your pot is not hot before you add the dough, the dough will stick to the pot.

Once the oven is heated, scoop the dough into the hot pot, cover and bake for 26 minutes.  Then, remove the lid and bake for 12 more minutes.

Remove pot, flip over and the bread load will fall right out.  Allow it to cool on a cooling rack for a few minutes. (I just set it on top of my burners, to allow it to cool uniformly, since I don't have a cooling rack)

Voila!  Beautiful, fresh, four ingredient, wholesome bread for your family.  (In the picture above, I sprinkled a few oats over the dough before I put it in the oven, you can add seeds, grains, nuts, etc.)
